Spring in Korea brings a unique twist to the traditional dishes, where warmer weather calls for comfort food to relieve stress. With the arrival of fresh produce like ripe fruits and green veggies, Korean cuisine incorporates these ingredients into their banchan (side dishes) and main dishes. To make the most of the spring season, here are seven Korean dishes that you must try before summer sets in!

1. Daegejjim: A Daegu regional cuisine, this dish is made with steamed king crab! Simple, but one of the best dishes you will surely enjoy!

2. Jjukkumi: Also known as spicy grilled baby octopus, spring is the best season to eat this dish, as this is when the octopi emerge from the deep waters!

3. Bingsu: A traditional Korean dessert with red beans, shaved ice, and condensed milk; while many think bingsu is only eaten in the summer, during the spring is when bingsu is the go-to dessert too!

4. Hwajeon: Another sweet Korean dessert made out of honey, glutinous rice flour, and beautiful edible petals; you can see why this is specifically eaten more during the spring!

5. Bibimbap: If you want some of the best bibimbap dishes ever, then you want to eat it when spring comes because spring is the perfect time to harvest all the wonderful crisp vegetables that are a staple in a classic bibimbap dish; you're bound to get the best tasting bibimbap in the spring!

6. Korean Strawberries: While this isn't a specific dish per se, you cannot omit the vast amount of strawberry-flavored things that appear the moment spring happens. Whereas American strawberries tend to be a bit sour, Korean strawberries have an extremely sweet flavor and are known for their ruby-red color! So whether it be in cakes, pastries, or even drinks, you don't want to miss out on eating Korean strawberries!

7. Jjukkumi Shabu Shabu: Jjukkumi is also a staple when it comes to the spring because that is the time when its head is filled with eggs making it even more delicious within dishes. Add it to the vegetable broth that's typically used for shabu shabu, and you have some of the most refreshing seafood shabu shabu ever!

Korean strawberries are the best! I couldn't have much this year because the price went up (₩2,000 to ₩4,500). Still one of my favorite Korean fruits. 🍓❤️
