Besides Rashomon and Kagemusha cuz I've seen those already
Seven Samurai and Yojimbo are a must. Hidden Fortress and Throne of Blood are classics, and I remember I enjoyed Stray Dog a lot, if your looking for a more contemporary setting.
More "recent" - Ran and Rhapsody in August. I don't think both are as strong as his better known classics but they are still very good. Rhapsody in August was underrated IMHO when it was released if I'm remembering correctly. Critics didn't like it much but over the years critical stance has been softer towards the film. Even if it didn't, I still like it.
With Ran, I saw it when I was still quite young and didn't get it. It was when I watched it years later I came to like it more. Partially because of recommendations from several Marvel comic book writers. A lot of mainstream attention was given to it and you can say I caught the hype way, way later.
