It’s because, in English, her name is generally spelled as “Lee Hyori.”
However, the actual pronunciation is “Ee Hyo Lee”
“Ri” is pronounced “lee” and “lee” as “ee.”
Another example: Seung Ri from Big Bang is pronounced Seung Lee.
Something like that.
